Bourg Saint Maurice - Les Arcs - In the heart of Bourg-Saint-Maurice's main shopping street, between lively terraces, bakeries, sports shops and souvenir stands, a red and white storefront catches the eye. Since June 2023, the boucherie David has put down its logs, its well-stocked windows and its home-made products. Behind the counter, David and Mélanie Excoffier run the shop with passion, like a matter of course.
He is from Pralognan, not far from here. "I've been a butcher since I was 14". he says bluntly. A trade learned on the job, apprenticed, pursued without ever deviating.
She was born here, in Bourg-Saint-Maurice, "from local parentsand worked in the kitchen for a long time. "We started out together at the time of Covid, with a website, an online shop and delivery in Pralognan.
But it's in Bourg that a new page is being turned: that of a year-round catering business in a resort that lives well beyond the seasons. "We had an opportunity and we took it.
A well-stocked shop window, a job well done
Here, nothing is left to chance. The meat is rigorously selected, from Limousin beef to lamb from the same region.
The poultry comes from the Landes region, "beautiful, well-behaved animals. The charcuterie is homemade: diots, pâtés, terrines, everything is prepared on site. "We like to make our own food, good and fresh. That's what we're all about.
And it's a hit. Regular customers are not mistaken. The average basket is close to 25 euros, proof of a loyal clientele committed to quality.
The house has also developed a catering business: buffets, weddings, birthdays... Mélanie, a trained cook, prepares the dishes and adds depth to the offer. "There was a real demand, and we're meeting it with what we know how to do.
Local, common sense and service
Next to the counter, a few shelves display a small selection of delicatessen products: Savoy cheeses, French products and a small range of Italian charcuterie.
"We do a little bit of everything, to help out, to complete the picture. Nothing ostentatious, but enough to satisfy lovers of good things.
The atmosphere here is simple and family-friendly, with a sincere welcome. A butcher's shop that exudes authenticity, that doesn't play the folklore card but the card of consistency, craftsmanship and common sense. It's an address that's already one of the valley's everyday landmarks.
