It's a special place, suspended between sky and glacier, at an altitude of 3,032 metres. At the top of the Tignesopposite La Grande Motte, Le Panoramic is more than just a high-altitude restaurant: it's a logistical and sensory adventure signed by Maison Bouvierwhere the authenticity of the wood-fired barbecue embraces the grandeur of the summits.
In summer, the tightly-knit team get out the braziers, turn on the music and sizzle up the meat and vegetables on the vast sunny terrace. "As soon as we can, it's barbecue time". smiles Romaric Rouard, head chef.

"We cook outside, in contact with hikers, summer skiers and families looking for a bit of fresh air. And how cool it is: even in July, you only have to look up to see skiers, while in the distance, the heat wave crushes the valleys.
High-flying barbecue
The summer offer focuses on the guinguette and the snack bar. But nothing is left to chance here. "Everything is homemade says the chef. For starters, hummus or country terrine, to lay the foundations.
Then it's on to the grill classics: merguez, generous beef ribs, or confit pork belly, vacuum-packed with herbs before a flamboyant run over the fire. And the vegetables? Seasonal and also grilled, for a simple, tasty and fragrant accompaniment.

Most of it comes from the region. A butcher in Moutiers, another in Chambéry, market gardeners in the Drôme... "We even have a producer who comes up here with his lorry. We choose the vegetables directly inside.

Every morning, it all goes to the kitchens of the Panoramic by funicular, with up to a tonne of goods transported every day to supply the various establishments in the area. Maison Bouvier.
Because the high-altitude kitchen also serves as a production centre: what is prepared here then comes back down to supply the shop, the bakeries, the restaurant, and so on. Ursus or the resort's hotels.
Perfected logistics... and an unforgettable terrace
"It's a real war machine, but everything is perfectly oiled". says Romaric Rouard, impressed by the rigour of the organisation. In the morning, he goes to the in-house bakery to pick up fresh bread and pastries.
Breakfast at 3,000 metres, lunch on the heights, an afternoon in the sun with a view of the eternal snows: the experience, panoramic in every sense of the word, hits the spot.

The public is varied. There are still a few summer skiers, until the glacier closes in mid-July. Then come the walkers, the families, the curious who take the funicular to breathe higher. "More and more people in summer notes the chef.
"And the average shopping basket remains reasonable, at between €20 and €30. People come here for the meat, the view, the atmosphere, and the simple luxury of enjoying a quality meal at the summit, as close to the sky as possible.
