Ingredients
For the pizza dough :
- 250 g flour
- 1 sachet baker's yeast
- 150 ml warm water
- 2 tablespoons olive oil
- 1 pinch of salt
For the garnish :

- 1/2 Reblochon cheese (about 150 g), cut into thin slices
- 100 g smoked bacon
- 1 red onion, thinly sliced
- 1 tablespoon olive oil
- A few sprigs of fresh thyme

Instructions
- Prepare the pizza dough :
- Mix the flour and salt in a bowl. Add the baker's yeast and warm water.
- Knead the dough for about 5 minutes until smooth and elastic.
- Add the olive oil and knead for a few more minutes.
- Cover the bowl with a clean tea towel and leave the dough to rise in a warm place for about 1 hour, until it doubles in size.
- Preheat your oven to 220°C (425°F).
- Brown the bacon:
- In a frying pan, brown the lardons over a medium heat until golden and crisp. Remove from the pan and drain on kitchen paper.
- Roll out the pizza dough:
- On a lightly floured work surface, roll out the pastry into a circle about 30 cm in diameter.
- Assemble the pizza :
- Transfer the dough to a baking tray lined with baking parchment.
- Brush the pastry with a tablespoon of olive oil.
- Spread the bacon and chopped onions over the pastry.
- Arrange the slices of Reblochon on top.
- Sprinkle with a few sprigs of fresh thyme and ground black pepper if you like.
- Cooking :
- Bake the pizza in the preheated oven for around 12 to 15 minutes, until the Reblochon cheese has melted and the crust is golden brown.
- Serve hot:
- Remove the pizza from the oven, cut into slices and serve hot.
